Baking Traditional Easter Cookies In The School

The students of the Second School of Vrontados have baked traditional Greek cookies the week before Easter. Everyone is excited for the Easter celebrations and what better way to bridge the time than baking Greek Easter cookies? The kitchen of the school has been full of students, parents and grandparents baking cookies. So heat your oven, put out your baking stuff and let’s bake!

First of all, the children read the recipe for knowing how to do that with the teachers and parents that were there for helping. After making the dough they did the shapes. When the shape is already done they applied a little water on the cookie and stick the sesame. After all the preparation the cookies got directly in the oven and after waiting a little, is time to enjoy our cookies! The recipe is very good and everyone can try at home!

This is the recipe:
First of all the ingredients (for ca. 60 small cookies):

–    200 g olive oil
–    Orange juice of one orange
–    ¼ spoon soda
–    Peel an untreated orange
–    200 g sugar
–    ½ small glass of Cognac
–    1 spoon baking powder
–    ½ spoon cinnamon
–    600 g flour
–    Sesame to cover the cookies

As a start, mix the olive oil, orange juice, sugar and cognac in a bowl. Put flour and the remaining ingredients except of the sesame (peel of an orange, baking powder, cinnamon, flour) in another, bigger bowl and mix it again!
Now add it to the first bowl and knead everything until you have the dough (you can know when is ready if the dough is not sticking in your fingers when you touch it). If needed, add a little bit more flour.
When this is done, form small round cookies out of the dough and put sesame on top of them. Put them on a baking tray with baking paper.
As last step put the baking tray into the preheated oven and bake it 20-25 minutes with 180 degrees.
And voila your Greek Easter cookies are finished!
